As our neighbors in the Champagne, we use to generate the old classical method of bottle fermentation as well. We use only Meunier, Pinot Noir, Auxerrois and Chardonnay. In the composition we proceed depending on our taste, as it seems purposeful to us. The high class with many awards has its output at specially selected grapes and the long-term yeast storage (up to 10 years) in the bottle.
